My taste buds sang tonight!

I am STILL in awe of how wonderful tonight's dinner was!  And So simple it's ridiculous!  Tonight we feasted on Curried Chicken Rice Soup, Salads of Romaine lettuce, sliced onions, tomatoes (for the Big Guy only), feta cheese, Italian dressing, and Feta cheese, and yeast rolls (frozen - sorry, I'm only so good!).  This soup was so yummy I had two bowls.  And so easy, I still can't believe how simple it was.
I did substitute the milk for Coconut Milk for a bit more of a Thai taste.  The chicken I used was leftovers of a Roasted Chicken.  I also used Basmati Rice as I just love it's flavor.  And as several reviews suggested, several more shakes of the Curry Powder.
Two HUGE thumbs up on this one!  Definitely a keeper!  Full of flavor and very satisfying.
And dessert, of course, was Halloween Candy!

  1. Oh yum! I love Indian inspired dishes. But I have never tried to cook any. We have a fab Indian restaurant/buffet about 15 minutes from our home. Love that place!

  2. Emily...I made the soup last week. I already had some chicken boiled, and shredded for future meals, so that was a time saver for me. I too used coconut milk, and a bit of soy milk (so Kassi could have it), and used brown rice because that is what I had in the pantry. Everyone LOVED it! I made the soup Wednesday night while I was making fajitas for supper that night, so it would be all ready to just heat up and eat on Thursday. This recipe made enough for all of us to have 2 meals. I figured it up, and I had a total of about $7.44 in this, so less than $4.00 for each meal...now that's my kind of cookin!!! Thanks to both you and Patty for suggesting this.
