A little Mexican at home! Chimichangas!

My family loves Tex-Mex food!  Here in NC, it's what is known as Mexican!  Black beans, chips and salsa, burritos, fajitas, guacamole, carnitas, and chimichangas are all favorites.  We have a fan favorite restaurant just down the street but many nights we prepare our yummy Mexican meals in our own kitchen.  Chimichangas are a yummy and easy meal!

This is one of those meals similar to spaghetti - exact measurements aren't required.  But if you need guidance, I'll attempt!

What you will need:
1 small onion chopped
1 pepper - green, red, yellow - your choice, chopped
Roughly 3/4 pound of meat cooked - ground beef, pulled pork, chopped chicken
Taco Seasoning (I buy the powder packets in the sauce gravy section at the grocery store)
Flour tortillas
Vegetable oil
Water (can make a "glue" out of a little flour and water if you would like)

Saute your veggies in a tablespoon of oil till tender.

  Add meat and taco seasoning - I use approximately 1-2 tablespoons of it.  Save the rest for another time.


Add about 1/2 cup of water.  Stir thoroughly.  Turn heat to Medium High to cook away the moisture.  After most of the liquid is gone, heat about enough vegetable oil to cover the bottom of a pan, about 1/4 in deep.
Take flour tortilla and spoon meat and veggie mixture into the middle.  Some people like to add rice and/or beans or cheese.  You choose.  We add beans on the side and cheese later.
Fold the ends toward the middle and roll up.  You can add a tab of water to the last part of the "roll" to "glue" them together if you would like.  Place in hot oil.

Cook about 3 minutes per side till golden.


Enjoy with sour cream and guacamole!
