Lip Smackin' Good! Bourbon Glazed Chicken


Bourbon Glazed Chicken!  YUM!  This was so tasty (Big Guy was even talking about it the next day!) and oh so easy!  This is one of those recipes that you toss everything into a bag in the morning to marinate, dash into a pan to cook and serve!  That is it!
And the sweet and slight spicy taste of the tender chicken breast just made this dish lip smackin' good!  Served with Basmati Rice, Steamed Broccoli and Salads.  Enjoy!

Bourbon Glazed Chicken
2  - 2 1/2  pounds chicken breasts cut into bite size pieces (mine were about 2 in by 3 in)
1 garlic clove crushed
1/4 tsp ginger (fresh or powder - I used powder)
3/4 tsp crushed red pepper (I used just a few dashes)
1/4 cup apple juice
1/3 cup brown sugar
2 TBS ketchup
1 TBS cider vinegar
1/2 cup water
1/3 cup soy sauce (I was out so I used Worcestershire sauce instead)

2 Tablespoons Olive Oil

Toss all ingredients except for Olive Oil into a ziploc bag or dish to marinate.  Mix well together.  Marinate a minimum of 30 minutes in the refrigerator but all day is better.

In a large skillet, heat oil over medium heat.  Add chicken and  sauce.  Cook through - about 15 - 20 minutes.
Allow sauce thicken on medium heat.  Enjoy!

  5. So glad that you liked the recipe. I love that it is simple and tasty! You can also put the marinade and chicken in a ziploc bag, freeze, and then it will marinade all days as in un-thaws.
