I love soups! They are on the top of my list for easy, filling meals! Add a salad or veggie tray, good bread - meal complete! And this one from Bo's Bowls is a winner! Italian Sausage with White Beans was so easy - and so flavorful! Full of goodness - tomatoes, carrots, celery, sausage, cannelloni beans, onions and seasonings, this soup rocked! We have weekend company and was a winner with all for dinner!
Bo's recipe calls for 1.5 lbs of Hot Italian Sausage links, about 5 links. I only had 3 but had a pound of Jimmy Dean sausage. Combined the two. Seemed to be a nice balance for the younger palates at the table.
Browned the sausages together.
Took the sausage out of the pan and sauteed the vegetables - onions, carrots, celery. Added some of the chicken broth to cook the vegetables. I was popping this into the crockpot to cook but had only 4 hours. So I gave the vegetables a jump start. Cooked them in 2 cups of chicken broth for about 20 minutes before adding the seasonings and stewed tomatoes. Added everything including the sausage into the crockpot.
Cooked in the crockpot on high for 4 hours. Served with cut vegetables and dip, onion and cheese biscuits, and Chocolate Chipper pie with homemade whipped cream. Delicious!

We made this last night. It was INCREDIBLE!! And Big Guy is right, it was even better for lunch tomorrow. It's a definite keeper!
