Moist and Juicy 40 Clove Garlic Chicken in the Slow Cooker

This is what happens when a chicken slow cooks all day long!   For me, half of it falls back into the crockpot when I attempted to take it out.  Poor little bird lost a leg and a wing in the transportation stage.  That is how juicy this 40 Clove Garlic Chicken recipe is!
Now before you think - 40 CLOVES OF GARLIC!!!!  Let me just tell you how fragrant my house was when we walked in from an all day field trip.   It smelled SO YUMMY!   One of those "Welcome Home, Glad you are here" kind of smells! Ahhh!  The garlic and onion gave the chicken just enough flavor without overpowering it.  Perfect meal for a winter night.  Not to mention the health benefits of garlic!  Bonus!
Recipe found at Debbi Does Dinner:

40 Clove Garlic Chicken in the Slow Cooker
1 whole chicken (recipe calls to cut it up, I didn't.  Just put it in the crockpot whole)
1 Large Onion, cut up
2 tsp Kosher Salt
2 tsp Paprika
1 tsp Pepper
20-40 Cloves of Garlic, peeled but left whole
A Tab of Olive Oil drizzled over chicken

Cut Onion
Toss 1/2 onion and 1/2 garlic cloves inside chicken cavity.  Place rest of onion and garlic in the crockpot with chicken.

Add salt, pepper, and paprika.  Place lid on crockpot, turn on Low for 7-8 hours.  My chicken cooked 8 1/2 hours.
